Filtering, Bottling & Harvest

The fun times have just begun here at Corcoran...
We bottle our Chardonnay, Cabernet Franc, Malbec and Mary's Cuvee this week. To get those wines ready to bottle, we have to sterile filter them first and that is usually a whole day event and this time we are planning on making it a 2 day event! Bottling is just a great time to see how it all happens. Watching the wine flow through the hoses and into the mobile bottling line is just amazing to see it come out as a complete package in the bottle. Once bottling is complete, we are anticipating harvest to be just around the corner. Our Viognier is tasting sweet and yummy, the seeds are starting to become brown and crunchy, which is a good thing. And our Cabernet Franc is also becoming ripe and lush. Usually we will start with our white wines and move to the later harvest reds, but this year one never knows because of this heat we have had, all the grapes are ripening quite nicely and early...lets hope that the rain and/or hurricanes stay away until after harvest!
